An Ode to Fresh Beans:
Fresh green beans are a highly sought after commodity in my family. While I picked the row this week for the share, my daughter, son and dog sat patiently by my feet hoping I would drop a few. “Can I eat this bean?” was a constant chorus. I kept a few for the shares thankfully, and we have planted over 5 rows of them in the garden (green x2, yellow, purple, and climbing) to ensure everyone gets their fill. From my childhood, I have many fond memories of picking climbing beans off my moms deck. Back when we lived in town, my son used to do the same.
So if you want my expert opinion, I say – eat ’em raw.
